A low GI rice and the only type of rice that contains the antioxidant, anthocyanin.
Rinse rice till water is clear to get rid of impurities and starch. Soak for at least 30 mins. Discard water and add 2 parts of water to 1 part of rice. Add quarter tsp of salt if desired.
